This particular AESOP fable was featured in an episode of Sesame Street. After some research I found that the underlying theme of "The Fox and the Grapes" is cognitive dissonance. The Sesame Street narrator couldn't have explained it any better: "Sometimes when people can't have what they want, they make believe they didn't want it in the first place."
